    What a lovely event for the Victory Hall Committee to organise and it was such a wonderful atmosphere on the afternoon of 26th January! So many visitors through the doors all afternoon...hundreds! It was terrific! It was a privilege to be invited and to provide a presentation and demonstration of Original Pilates.   • Diary of a Pilates Instructor...Something for the weekend? Avocado Savoury Crumpets! 🍳 🥑🌶🥓

    Another super week of 12 classes, fabulous 1-2-1 and lunchtime corporate sessions! Well done to you all! 🌟 I thought I’d share with you what I’ve been eating recently, which makes an incredibly satisfying breakfast or brunch...perfect for a lazy Saturday or Sunday... My husband, Barry, makes the most delicious hot crumpets, with bacon, avocodo, chilli and poached egg...My role in this, is creating the perfect poached egg every time! If you don’t want the meat, just ditch the bacon! Now, Jamie Oliver has pretty much taught me all I know on cooking and poaching eggs but I find that despite using super fresh and free-range egg, I do need more than use a pan of recently boiled water, to poach the perfect egg! So, here’s how to make this amazing crumpet feast; 🥑 Place 4 small cooking rings (3-3.5 inches in diameter) into a large, deep frying pan of water and boil. Then turn down to a very gentle simmer...you don’t want to see any bubbles as boiling water is just too hot! 🥑 Gently pan fry 2 rashers of good quality bacon Johnsons of Old Hurst. Do not brown or allow to crisp. Turn off the heat. 🥑 Remove the stalk end and carefully score and cut lengthways around a ripe avocado, feeling for the knife against the stone. Carefully remove the stone, pressing the knife edge in and with a gentle twist of the knife, the stone will detach. 🥑 Peel the avocado skin away from each half, place in a bowl flat side down and crush with a potato masher. 🥑 Blitz 3 small red Birdseye chillies 🌶 in a mini food processor or finely chop with a knife. 🥑 Trim the excess fat from the bacon rashers and remove just the main oval of bacon. Add the rasher lengths to the mini food prossesor and blitz together with the chilli. 🥑 Mix the blitzed bacon bits and chilli into the bowl of crushed avocado. 🥑 Then take 2 FRESH eggs from free-range ‘Happy Chickens’ please, crack each egg into a glass and then plop into a cooking ring in the simmering saucepan of water....and look away! (Get your supply from the happy hens at Colne Heath Farm, near the recycling centre 24/7 from the egg machines. There are now 3 sheds! 💕Just £2 for a dozen of the most amazingly delicious and super fresh eggs!) 🥑 In a little microwaveable bowl or cup, melt a knob of butter. 30 seconds should do it. 🥑 Toast 2 crumpets, plate and then drizzle the melted butter over each crumpet, so it oozes into the crumpet holes. 🥑 Keep an eye on your poaching eggs and be ready to turn off the heat just before they are done. You are looking for the whites to be cooked and the yolk to be done but not boiled. Poaching this way should take between 5-7 minutes only! Check by using a short pair of metal tongs, grabbing the cooking ring and gently moving just half an inch. The poached egg should move in tact with the ring. If it doesn’t, leave for another minute or two but watch. Turn off the heat and cover the saucepan with a lid. The eggs will still be poaching so don’t turn off the heat too late. 🥑 Then, using 2 dessert spoons, add a generous and thick amount (about an inch) of the avocado, bacon and chilli mix, onto each hot crumpet. Flatten down. 🥑 Then, with the metal tongs, remove each cooking ring leaving the eggs behind in the frying pan. 🥑 With a plastic slotted spoon, carefully manoeuvre the spoon underneath each egg and lift out carefully (it’ll be slippy!) Allow the excess water to drain for a couple of seconds and then place each egg carefully on top of each avocado layered crumpet, for the perfect crown! If making brunch, just double up the ingredients allowing 2 crumpets per person! Cut into the poached egg and quite simply, revel in this deliciousness!   • Diary of a Pilates Instructor...2019 Classes Resume! ✨🤸🏼‍♀️

    Just to confirm that Core Factor Pilates classes resumed last night, kicking off with Somersham 6pm and 7:15pm classes! Also, due to the recent Christmas and New Year 2 week break, all classes this week, no matter what stage in the course your class was before Christmas, ALL CLASSES THIS WEEK will feel more like a MINUS WEEK 1! Ha ha! 😁 It is important to ease back into Pilates gently, so the focus is on stretching and lengthening with some gentle core strengthening. I’m also delighted to have my very own new Instructor leotards ready for this year, all superbly embroidered to an exceptional high standard by the fabulous Jack Hampson of Impressions Print and Label. I’m so thrilled we work together and very grateful for your support! It’s just brilliant to support local businesses. I’m also very much in love with my fabulous bling-tasting gold shimmery Spine Stretch mug you very kindly gave me for Christmas! 🎄 You’re not wrong...it is SOOOOoooo ME!   • My Lucky Lentil, Courgette and Ham Soup!

    Diary of a Pilates Instructor...what I had for lunch yesterday! So, with the arrival of a New Year and January, so besets the need to cut back on those December over-indulgences, which we all deserve and need. It’s important to not cut out sugar or banish carbohydrates completely but remember to enjoy a balanced diet. Aim to reduce or half your usual intake. Just a little bit of preparation and forward planning means that you can cook from scratch more and rely less on processed and quick meals. Takeaways and short cut meals are of course to be enjoyed but not to be relied upon. Home cooking is wonderful for beating stress, knowing what goes in your food and helping you enjoy real, wholesome food. So, to perhaps inspire you, I want to share what I fervently enjoyed for lunch this Monday! ...Soup left over from my Sunday lunch and it’s utterly delicious! For the veggie option, just ditch the ham and corned beef, swapping the chicken stock cube for a vegetable one; it’s no issue and tastes equally divine! You can enjoy this as soup, or just some as a cooking sauce, which is fabulous with pasta or coat a fresh piece of fish or chicken fillet, cover with foil and oven bake. Here’s my recipe for Lentil, Ham and Courgette soup. Full of Vitamin C and packs a protein punch! Enjoy! Makes 6 servings! 🥒 Chop 1 white onion and pan fry with a little olive or vegetable oil. 🥒 Chop and divide 2 large courgettes as well as 3 garlic cloves and add to the pot. Add 2 kettles of recently boiled water (about 3 litres). 🥒 Peel and chop 1 carrot and 1 large potato, popping both in with a chicken stockcube and stir. 🥒 Allow to simmer for 25 minutes, stirring occasionally. 🥒 In a separate saucepan, simmer for 4 minutes, a can of pre-soaked lentils in their can water then thouroughly drain and wash through with some boiled water. Add 4/5 of the lentils to the pot and set the remaining 1/5 aside to be added to the soup later whole. 🥒 Throw in a cup full of frozen peas. 🥒 Slice and roughly chop 2 large slices of quality ham and one slice of corned beef (Johnsons of Old Hurst) and stir. 🥒 Then blitz with a handheld mixer until the pot contents are blended smoothly together. 🥒 Add another half kettle of recently boiled water and stir in gently, the set aside lentils, keeping them whole. 🥒 Leave to simmer for another 15 minutes and then serve, with half a slice of fresh bread or half a bread roll.     Pilates Ode to 2019 So, we’ve enjoyed the Christmas cheer, And welcomed in the New Year! Full of plans and hopes for what it brings, But oh how tight are our hamstrings? Christmas is a time for fun and jolly japes, But too much time sat still, just causes body aches, It’s great to lounge about for couple of weeks, But blimey, our joints are now full of creeks! All those festive parties, Really soothe the soul, Time to wind down is vital, But who’s back feels like a pole? When those clothes go on, And all feels tight, It’s just too distressing, When those trousers don’t fit right. But fret ye not, Pilates Liz has got a plan, To get you moving, I’m a Pilates fan! When you think, That you can no longer bend, Don’t worry, I’m here to be your flexible friend! We’ll strengthen and lengthen the muscles and rest, Then we’ll strengthen and lengthen some more, with focus and zest. We’ll do ‘The Side Kick’ and stretch the Sciatic Nerve, Three reps each leg please, performed with control and verve. We’ll practice ‘The Scissors’ and stretch the spine, You’ll soon be refreshed and Skip from classes just fine! So, be with me from the 7th to bend the knee and stretch the waist, Come join me in classes this week, come join me with haste!
